Grilled Fillet of Hake with Garlic Butter, Prawns, Brown Shrimps and Stir Fried Vegetables (serves 4)

INGREDIENTS



 
METHOD

  1. In a hot pan with a small amount of oil, sear the seasoned hake on both sides to produce a nice golden brown colour. Place on a tray with a knob of garlic butter and grill gently for approximately 8 minutes.
  2. In a small pan, fry stir fried vegetables and season.
  3. Gently poach the prawns and brown shrimps in garlic butter for a few seconds just before serving.
  4. On a hot plate place some puree and buttered spinach, place the hake on top, followed by the stir fried vegetables. Spoon over the prawns and shrimps allowing the garlic butter to trickle down over all the ingredients.
