Pancake recipe, the Welsh Rarebits way!

Ingredients

300ml buttermilk

200ml milk

2tbs butter

250g plain flour

2tsp backing powder

2 dessert spoons sugar

½ tsp bicarbonate of soda

1tsp salt

Method

1.       Melt the butter

2.       Whisk the melted butter with the buttermilk and milk

3.       Add backing powder, sugar, bicarbonate of soda and salt and stir until combined, leaving the batter lumpy

4.       Rest for 1 hour in the fridge before cooking
